Grasshopper… pie?

I’ve told you before, I love to bake and make desserts.

And when I do, I usually try to make healthier versions of things… like the cookies or apple pie I shared a while ago.

But…

(and I warned you about this yesterday…)

the dessert I’m talking about today has NO health value whatsoever.

It’s a dessert my mom used to make sometimes when we were growing up, and I even used to make it for Mike when we were in high school together.

So of course (even though it’s completely bad for you) I still make it every now and then.

The kids think it’s great (and when you see the ingredients, you’ll know why. *cringe*).

Last week, my daughter even asked for it on her birthday instead of a birthday cake. (Maybe that’s because it’s called Grasshopper Pie and she likes the name. Or maybe because it’s light green and mint-flavored.)

One good thing, though, if you don’t like to bake: it’s a freezer pie and it’s super easy to make.

Here’s how you do it:

Grasshopper Pie Ingredients:
1 package Oreos (or Oreo-like cookies. Safeway has an organic version of these cookies and they’re really good. Oh wait… there’s something kind of healthy!)
2 jars marshmallow cream
1 large container Cool Whip
1 lid full of peppermint extract
a couple of drops of green food coloring

Put the package of cookies in a bowl or bag and crush them into small bits.

Put the Cool Whip and marshmallow cream in the mixer and blend, then add the peppermint extract and food coloring.
Line a pie dish with the crumbled cookies.

Then, pour filling in, sprinkle some remaining crumbs on top for decoration, and freeze for at least an hour before serving!

P.S. My daugther did a little dessert making of her own last week too.  She made this cake by herself–the whole thing from start to finish. Gotta love the Peeps on top! :)

It may be even less healthy than Genny's!Gooey Caramel Chocolate Crunch FantasyIngredients:1 Oreo crust (I make it as if it was a graham cracker crust)30 soft caramels¼ c. whipping cream½ c. caramel ice cream topping1 c. chopped pecans1 c. Heath bar pieces¾ c. semisweet chocolate chips¼ c. whipping creamIn a saucepan, melt caramels in caramel ice cream topping over low heat, stirring often. Stir in the first ¼ c. whipping cream. Remove from heat and stir in nuts and Heath pieces. Pour into crust. Cover and cool in refrigerator for 1 hour.Melt chocolate chips with other ¼ c. whipping cream in a saucepan over low heat, stirring often. Remove from heat and spread evenly over caramel mixture. Cover and chill for 1 hour. Cut and serve.Notes: this is expensive, but worthwhile. It tastes like a candy bar. Very rich, so cut your slices small. The recipe says it serves twelve.

  2. I know my hubby and kids would love that. I have gone off sugar for a while as I tend to overdo it on chocolate and give myself hives! My husband is such a sweet tooth though- last night I looked at him on the couch and he had a fudgsicle in one hand, and marshmallows in the other. He had the decency to look sheepish when I laughed.

  4. Sounds yummy – of course we wouldn't eat any of it as we try to live sugar-free! Easier said then done though…And chances are if no on was looking…We'll let's just say I might have snuck a taste!! I love desserts!   5. Are you kidding…anything with oreos in it is totally heathful. Well, in the sense that it brings a smile to your face and a little joy in your belly.I learned that giving yourself the freedom to indulge every once in awhile is a good thing. I actually taught that when I was a weight loss counselor with Jenny Craig years ago. Enjoy your yummy pie.
